What is opening in Natick Center? Pixlcat Coffee, a specialty coffee and butter mochi café, is closing its Charlestown location and opening a new flagship in Natick, bringing its gluten free butter mochi and rotating flavor menu to the town's center.
Living in Natick Center, I notice when something new is about to land here before it's officially open. This one's worth mentioning. Pixlcat Coffee, the specialty coffee and butter mochi café that started in Charlestown, is closing that location and opening its new flagship right here in Natick.
If you haven't had butter mochi before, it's a Hawaiian dessert made from sweet rice flour, coconut milk, butter, and eggs, baked until the edges go golden and crisp while the inside stays dense and chewy. It's naturally gluten free, and it's the kind of thing that's genuinely hard to stop at one piece. Pixlcat built their menu around it, with a rotating lineup of flavors that includes classic, ube, matcha, chocolate, black sesame, and s'more, along with seasonal specials.
What I like about this one isn't just the pastry. It's who's behind it. Pixlcat was started by two brothers who grew up in the Boston area before going on to build one of San Francisco's most acclaimed restaurants. Bringing their concept back to this area wasn't really an expansion for them. It reads more like a homecoming, and now that homecoming is landing in a neighborhood café format, right in the town I actually live in.
This is the kind of thing that adds real texture to a town, not just another coffee option, but a reason for people to wander into the center on a random Tuesday. I'll be keeping an eye out for the opening, and I'll probably be one of the first in line once the doors are open.
